1/3 cup olive oil
1 tsp dried basil
1 tbsp sundried tomatoes in oil, chopped
1 tsp dried chives
1 tbsp fresh parsley, minced
1/2 tsp minced garlic
1 tsp dried red chile flakes
2 cups mozzarella, cubed
Combine all ingredients and store in the refrigerator for a minimum of 24 hours to allow to flavours to blend.
For a twist, try this same marinade with mini bocconcini or another soft, fresh cheese.
