Cynthia's Raspberry Shrub
12oz raspberries
1 cup sugar
1/2 cup balsamic vinegar
1/2 cup water
Fresh mint leaves for garnish
Simmer on medium for ten min. Let cool, then pour into a sealable glass container (I use a mason jar) and store in the fridge for two to three days.
Strain through a sieve to remove pulp and seeds.
Pour over ice and top with club soda or tonic. I like 1 part shrub to 3 parts soda! Garnish with fresh mint and enjoy!
