Avocado And Grapefruit Cocktail
4 ServingsThis is a little appetizer recipe straight from South Africa. It is a lovely vegetarian option to the classic shrimp cocktail.
Don't get scared off by the bottled salad dressing. This is the quick recipe given to me by a few South African ladies who say it is the closest thing here in Canada to what they would use there.
3 Grapefruit, Halved And Segmented, Juice Reserved
2 Avocado, Ripe, Peeled And Diced
50 ml Bottled French Dressing
Fresh Mint, Garnish
1. Toss the grapefruit segments, diced avocado and grapefruit juice in a bowl. Chill thoroughly.
2. Spoon the mixture into 4 individual serving dishes with a little of the juice and half of the dressing.
3. Add the remaining French Dressing to each dish and serve, garnished with a sprig of mint.
