Caramel, Pear & Blue Cheese Flatbread

Caramel-Pear Flatbread

This is my go-to pairing for the port tasting in my Intro to Wine & Cheese Class. It is easy to make and has converted more than one "blue cheese hater".

To assemble in advance, add toppings except for caramel and wrap well and freeze until just before you are ready to bake. Add another 5-7 minutes onto your baking time if baking from frozen.

Look for the Portuguese "Caramelo" in the international aisle of your grocery store.

 

Here is a great LBV (Late-Bottle Vintage) Port to try with your next batch... Cabral LBV Port 2009.

8 Servings

1 pre-baked flatbread
3 oz blue cheese, crumbled (a creamy Danish blue works well here)
1 pear,unpeeled and thinly sliced
1 tsp butter, melted
Freshly ground black pepper
1 tbsp Caramelo - or any dark caramel sauce

Directions:

Sprinkle flatbread with crumbled cheese, leaving a ½ inch border.

Arrange pear slices over cheese.  Brush with butter and sprinkle with pepper.

Bake in a pre-heated 400°F oven for 20 to 25 minutes until golden.

Drizzle with Caramelo, cut into 8 pieces and serve.
