There's nothing as easy as a soup made in blender...unless it's a CHILLED soup made in a blender that you can serve during the heat of summer!
And in shot glasses!
Makes 6 Servings
2 avocados
4 cups english cucumber, peeled and chopped
1 cup onion, roughly chopped
2 cups vegetable stock
1 tsp fresh ginger, grated
2 tbsp fresh lemon juice
1 tsp salt, or to taste
DIRECTIONS:
1. Slice avocados in half, remove pit and meat. Reserve a small portion for garnish.
2. In a blender puree cucumbers, avocado and onion. Add remaining ingredients and process until smooth. Chill until ready to serve. Taste prior to serving and season if necessary.
