These are the quickest slice-and-bake appetizers in my repertoire.
As long as there is a cheese in the filling to bind everything, feel free to mix up your favourite fillings as you like!
Spicy Spinach & Cheddar
1/2 pkg Puff Pastry,Thawed And Rolled Out In A Rectangle (if not already)
1/2 cup Old Cheddar Cheese,Finely Grated
1/2 tsp Cayenne Pepper
1/4 cup Frozen Chopped Spinach,Thawed, Squeezed Dry
Sprinkle pastry with cheddar and cayenne. Divide spinach evenly over top and roll each side of the rectangle into the center so you finish with a double-log shape. Wrap the log in parchment paper and freeze for 12-15 minutes. Preheat the oven to 400F. Unwrap the log and slice into 1/4" pieces. Lay the slices flat onto a lightly greased baking sheet (or lined with parchment paper) and bake for 12-15 minutes until lightly golden brown. Serve slightly warm or at room temperature.

- Roasted Red Peppers & Mozzarella
