Arugula-Pistachio Pesto

1 cup pistachios, shelled
3 cups arugula
1/3 cup Parmigiano Reggiano, grated
4 cloves garlic, minced
1/2 olive oil

In a blender or food processor, process all ingredients until it reaches the desired consistency, adding more oil as needed.
