1 lemon, zested, peeled, seeded and flesh cut into pieces, zest reserved
1 tbsp lemon zest
1/4 cup fresh basil, chopped
1/4 cup fresh mint, chopped
1 clove garlic, chopped
1/4 cup olive oil
1/4 cup parmesan, grated
In a blender or food processor, process all ingredients until almost puréed, but still a little chunky. Add more oil as needed until you reach the desired consistency.
