Mint-Parsley Pesto

1 cup parsley, packed
12 fresh mint leaves, packed
2 cloves garlic, coarsely chopped
1/4 cup walnuts
1/2 cup extra virgin olive oil
1/4 cup parmesan, freshly grated

In a blender or food processor, process all ingredients until you reach the desired consistency, adding more oil as needed.
