Penne Alla Vodka

Servings: 6

Note: For those who need (or want) a little more protein in their pasta, try adding some crispy bacon bits or some sautéed Italian sausage.

2 tablespoons olive oil
1 large shallot, finely minced
2 cloves garlic, minced
1 tsp red chili flakes
1 jar tomato passata (puréed tomatoes)
1/2 cup finely chopped fresh basil
salt and pepper to taste
1/4 cup vodka
1 pound penne pasta
1/2 pint heavy cream
1 tbsp butter
shaved parmesan - for garnish

Directions:

1. In a large skillet over medium heat, cook shallots in olive oil until tender, 1 to 2 minutes. Stir in garlic, chili flakes and tomato passata. Stir in basil, salt and pepper and simmer 15 minutes. Stir in vodka and cook 15 minutes more.

2. Meanwhile, bring a large pot of salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Do not drain!

3. Using a slotted spoon, transfer the penne from the pot of water into the pan of sauce. Stir in cream and simmer 5 minutes more, adding 1/4 cup of pasta water as needed to thin the sauce as you like.

4. Stir in the butter until incorporated. Serve hot with shaved parmesan.
