Don't you think quiche should be showcased more on your table?
Other than just at brunch?
A simple pie crust, a few eggs and a chance to mix in your favourite flavours or leftovers from the night before are all it takes to pull together an elegant entrée that can impress your girlfriends at your next luncheon or spoil your family for a weeknight dinner.
This easy quiche recipe features meaty morels for some texture and some zippy green onions for that little fresh bite in the finish.
...and just about anything feels decadent with a little Gruyère!
Makes 8 Servings
INGREDIENTS
1 pie crust, blind baked
1 oz unsalted butter
1 cup green onions, thinly sliced
4 oz fresh morel mushrooms, sliced
3/4 cup whole milk
1 cup heavy cream
1 tsp coarse salt
1/2 tsp black pepper
3 eggs
1/2 cup Gruyère cheese, grated
DIRECTIONS:
1. Preheat oven to 350F.
2. Melt butter in a medium sauté pan over medium heat until foamy.
3. Add green onions; cook, stirring, for 1 minute.
4. Add morels, and cook, stirring often, until fragrant, for 2 minutes.
5. Stir in milk and cream, and bring to a simmer.
6. Transfer to a medium bowl. Let cool to room temperature, about 30 minutes. Stir in salt and pepper.
7. Place crust on a rimmed baking sheet.
8. Whisk eggs in a medium bowl. Stir in mushroom mixture.
9. Fold in Gruyère. Pour mixture into crust.
10. Bake until puffed and golden, 25 to 30 minutes. Let cool slightly. Serve warm or at room temperature.
