Tropical Turkey Burger

I prefer goat cheese in these burgers, but if you want to substitute another soft, easily melting cheese - go for it!

2 lb lean ground turkey
1 ripe mango, grated/puréed
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1 tsp cayenne pepper
1 tsp salt
2 cloves garlic, minced
2 cups arugula
1 cup goat cheese (or brie), chilled and cut into 4 large pieces
4 thin slices of cored pineapple
4 thin slices peeled dragonfruit

DIRECTIONS:

1. Preheat grill to medium high. Combine turkey, grated mango, parsley, cilantro, cayenne, salt and garlic in a mixing bowl until very well combined. Form mixture into four even sized patties.

2. Using your thumb, make a large hole in the middle of each burger. Place one piece of

cheese inside each depression and form back into burger shape.

3. Place burgers on well-greased grill and turn heat down to medium. Grill 4-6 minutes and flip. Grill for an additional 5 minutes or until internal temperature has reached 165F.

4. Meanwhile, place a well-greased wire rack over high heat on another section of the grill. Lightly grill the pineapple and dragonfruit slices until they are slightly softened. Remove and set aside.

5. Serve burgers with grilled fruit slices, arugula and on lightly toasted buns.
